70% Dolcetto & 30% Zibibbo - both held on skins for 14 days, pressed to tank to settle then into old oak barrels for 5 months, racked back to tank for 1 month. Red berries and winegums on the nose, savoury blackberry and cherry tartness, amaro-like light spice, crisp and refreshing acidity. Chill it down & watch it disappear! - Defialy.
